Cannibal Creek is located on the foothills of the Black Snake Ranges (close to West Gippsland but not quite in the region).

The Hardiker family started planting vines on the sandy clay loam soil (weathered from the granite hills near Tynong) in 1997.

The wine-making occurs in a heritage listed timber shed that also has a small cellar door. The vigour of the vines is moderately high so fruit quality is maintained through canopy management and pruning methods to limit the production of yields to approximately two tonnes per acre.

They have started a second Hardiker range that includes a Pinot Noir, unoaked Chardonnay and Cabernet Sauvignon.
